Turning Dairy Data into Better Cheese: Predictive Modelling at Dairygold

Ram Raj Panthi, PhD's story is a brilliant reminder that data science isn't confined to tech, it's transforming how real products get made.

Ram is the Technical Lead for Cheese at Dairygold Co-Operative Society Ltd in Ireland. For context, Dairygold is an Irish dairy co-operative: it processes milk supplied by its farmer members and produces a range of dairy products and ingredients for domestic and international markets.

Before moving into industry, Ram was a Postdoctoral Researcher in Food Science at University College Cork, bringing deep scientific rigour into the world of large scale food production.

From the outset of the Postgraduate Diploma in Data Science with the Data Science Institute, Ram applied what he was learning directly to operational challenges, starting with a common one in manufacturing: data scattered across multiple systems and formats.

That's the real value of applied learning: when it moves from the classroom straight into the factory floor, and makes things better.

By using modern data management techniques to bring together disparate sources, he was able to improve data quality, streamline analysis, and unlock insights that contributed to measurable improvements in production processes.

He has since been applying predictive modelling and machine learning techniques to gain deeper visibility into production patterns, supporting smarter decisions and more proactive process improvement. Perhaps the most powerful part: Ram has developed a genuine passion for data and data science through the programme, and he plans to keep building on these skills, not only in his current role, but also to help and advise other businesses on how to use data to improve performance.
